The health benefits of the Mediterranean diet are well-known. As well as being healthier, a recent article concludes that the menu traditionally eaten in Spain leaves less of a carbon footprint than that of the US or the United Kingdom.

These bioactive compounds respectively help to prevent cardiovascular diseases and cancer. This is contained in a study carried out by the University of Barcelona and the CIBERobn network, Spain, which confirms sofrito as an essential part of the Mediterranean diet.
